But why? If a club can't field enough players for a game why does it matter if it's made up of injuries, Covid or other illness. I can imagine the outrage on here if we were only able to field say 9 players due to a mixture of injury/illness/Covid

It matters massively. The rules are if you can't field a team then its a default win for the opposition. The decision to postpone the game is due to covid and the need to limit the spread both within the club and the opposition club. So a club with 6 covid cases and 2 injuries and a club with 1 covid case plus 7 injuries are completely different scenarios. Ones an outbreak that isn't under control the other is just normal football.

But injuries are part of football, covid is different , we were really short at the start of the season but managed , we had the game v everton called off and the media and pundits didnt cry for us , on the contary in fact

The supporters have to declare it.
I don’t see why if unvaccinated should count given their isolation period is longer. That’s a voluntary act that leads to additional upheaval.
