Not really bothered me mate, know it ain't to clever for you, but you can't beat that smokey grilled flavour. Incidentally, I've had a bloke in the town make me a metal tray which I designed to fit in my gas outback bbq. I've took the grill off and the lava rocks underneath and fixed a sideways kebab rotisserie. It's ready for the charcoal tomorrow and Souvla's on the menu.

Edit: Paphos any tips with the marinade for Souvlaki. I hope you don't mind but I know you like talking about scran.

Zivania, olive oil and Oregano mate. That's it.

Best Kebab shop i know is Deniz's, in Weston Super Mare. Proper Turkish kebabs.

Difficult to put a finger on what's authentic over here mate. Oregano is popular on a lot of marinated meats where I've been. Also some places use sumac, which gives a nice lemony falvour. Salt should be added to meat pieces during cooking, unless you're making shish, in which case you add to the mince.

For pretty good general seasoning of mince for shish, you have to get the salt just right. I put a teaspoon for every 500 grams of meat. You can then add your herbs of your choice. Remember, dried herbs are quite strong, so go easy on them. I always put some fresh chopped coriander or mint into the mix to give it a real nice flavour. A teaspoon of tom puree, an egg yolk also go into the mix.

You can apply the same method to your meatballs. What's important to put in the meatballs is garlic, parmesan a little olive oil and some thyme. You want it spicy?, put in some cumin and fresh chopped chilli.

Fair enough if that's yer thang, the Pakistani/Bangladeshi take on a kebab, pile it high and flog it cheap, but as I said in the op, thats the sort of kebab dished up everywhere now. This was in praise of the 'less is more' Greek/Turkish originals.....

Worth the 1 hour drive from leaving the ground to travel the 3 miles!!

Absolutely top notch, could have had two.

It's just on the corner so kind of just off it,if you've come from The mile and turned onto Dickenson rd ,I think when you get to the 1st or 2nd set of lights you can see it in front of you on the left.
