Because it's not a new riddle, been around for a while. the answer is they pay £25 which works out £8.33each the bellboy gets the 0ther 0.66p for each person that works out at 0.66p x 3 =the £2(or for the pedantic ones £1.98).
So original £25 + £2 = £27 plus the £3 he gives back works out they total £9.33 out of the tenner involved plus 66p for the porter

Why is it £27 + £2 = £29?

Surely it should be £27 - £2 = £25, which is what was actually paid.

9.33*3=27.99 + 2 =29.99 so still a penny missing at least
 
Each give £10

£10 x 3 = £30 originally paid to the owner

Owner keeps £25 or £8.33 per person

Thief keeps £2 or £0.67 per person

Customers get £3 or £1 per person

Customers actually pay £9 per person

£9 Customers payment - £0.67 Thief = £8.33 Owner

The missing pound is based on the premise that £27 + £2 = £29 but fails take into account that only £2 has been stolen from
3 guests not £3 (67p per guest). The other £1 correctly remains with the owner (33p per guest).
 
Look at whare the money is step by step:

Let's call the three guys X, Y & Z, the owner A and the bell-boy B

1) X, Y & Z have £10 each, A has £0 and B has £0. Total = £30.
2) X, Y & Z each give £10 to A. So X, Y & Z have £0, A has £30 and B has £0. Total £30.
3) A gives B £5. So X, Y & Z each have £0, A has £25 and B has £5. total £30.
4) B gives £1 each to X, Y & Z. So A has £25, B has £2 and X/Y/Z have £3. Total £30.

They think they've paid £27 but they don't realise they've only paid £25, which is equivalent to £8.33 each, but think they've paid £9 each. The difference is £0.67 each, which is £2 between the three. So the £2 added is already included in the £27 they think they've paid.
