Thought it was because we use the norman/french spelling of the original latin word color/colur, which the americans reverted to using to simplify the languague, which ties in with the printing press too.

Americans tend to use "color" and "honor" because of an entirely different reason. Money.

Printing words back in days of yore were done by the letter so they removed superflous letters in certain words to reduce the cost, hence the "odd" spellings, that is genuinely the only reason.
