The cooking thread!

Really got into cooking, and finding more out about food in general, when I got into shape a few years back.

My favourites are still curry made with yoghurt, and a simple pork steak with chilli and mustard (tip: sweet chilli sauce and English mustard are great mixed together!) Also did some sweet potato muffins which were decent.

Something I can't stand though is frozen meat. Can always tell, too watery and tends to be tougher and just doesn't cook right.
 
Yeah I like to cook most Saturdays, especially with no live games to attend.

All pretty easy things to knock up to be fair but quality ingredients are a must in my opinion. Knocking something up from fresh at home is cheaper and in many cases a lot nicer than a takeaway.

Some of my favourites are:

Spaghetti carbonara
Dauphinoise potatoes
Sticky pork ribs (Gordon Ramsey recipe)
Buttermilk fried chicken
Lancashire hot pot
Spicy chicken enchiladas
Full Sunday roast c/w homemade Yorkshire pudding

Quick, easy and healthy midweek teas like stir fry is so simple to knock up. All in one pan too so hardly any washing up.
 
I made sticky toffee apple crumble last week. Delicious.

140ml double cream or blue Elmlea, 140g brown sugar, 3/4 packet of salted butter, heat until dissolved and bubbling, then simmer until it has the consistency of a think gravy. Set aside to cool.

Heat your apples with a couple of spoons of the toffee sauce mix until soft. Optionally add a few chopped dates at this stage. Transfer to a baking dish and pour the toffee sauce over it. Top it with your favourite crumble, 200 degrees for 25 minutes and serve with cream or ice cream. Or custard I suppose.

Leave some toffee sauce so you can scrape the bowl and eat it before washing up.
 
For breakfast this morning I made an omelette. Omelette with Onion and Tomato, When I poured it onto the pan I put two small slices of bread in it and turn the bread to wet it both sides, When the bottom is cooked flip it over and do the other side that both sides of the bread is toasted too. Got shredded cheese put it on top that it melts, And bacon out of the grill and put it on top of the Omelette. Take it out of the pan fold it that it's a sandwich. Jobs a good one!

lockdown has given me time to learn to cook. I plan menus forward a week and spend at least a couple of hours on planning and cooking food. I have cooked recipes From the main cusisines, particularly Indian, Mexican, North African and Asian. I genuinely love it.

I always end up with a slightly burned taste off my toffee no matter how many times I do it!

I'm always trying to make sticky toffee pudding I can never get it right though. You try making it before?
