We used to do it regularly then shove Yaya forward. Its all about how you reshape the formation to accommodate the substitution.
I understand what you’re saying but we did it with Yaya because of his height, so we went with long throw ins, and long balls hoping Yaya was a goal threat from picking up the 2nd ball or knockdowns, think Conte decision backfired when Kuluveski went off because they had no width.
 
Spurs would of been a mid table side for many years without him

With him they are around top 4 pretty consistently
Except for this one where they are struggling. Missed his oppotunity to win the League in 2016 and no trophies to show for it. Was very fortunate not to be moved on very earlier on his career.

Fortunate or earned his place through hardwork.

He most likely would have got a chance with another club and fought back up to PL like Crouch did.
