I would go for something like a NIkon D3500/D5600.

Used, you can probably pick up a Nikon Z5 which is mirrorless for just over budget.

I can't recommend canon because I don't know which models are which. I've only ever shot Nikon and Sony :)

Someone else will likely be able to recommend you a Canon equivalent.

EOS T7, great value for money, can’t go wrong with either one imo. I bought a Sony mirrorless a few years back due to its size, wish I’d stuck with one of the Canon or Nikon with hindsight
I was Canon EOS all the way until I managed to pick up a Sony A7. Took me a while to get used to the menus and controls, but once everything is set up and the controls are customised it becomes second nature after a while. Sony lenses are pretty good, and using Adobe Lightroom and Photoshop I have full control over colour space and lens corrections.

First image is my EOS-M, second is my Sony A7. The point is, it doesn't really matter what tool you use as long as you are comfortable and it works for you.

I use a Sony A7 IV and a Sony A7III

Love them
 
Turns out I have an A6000, tbh it’s way too complicated.
Although seems overcomplicated with loads of different settings and customisable controls the A6000 is a great little camera. It's still got the basic controls which is all you really need. I use an A7, and probably change no more than 4 or 5 settings when I'm out shooting. It did take me a while to get it set up how I like it though, setting up the customisable controls and the quick menu and stuff, but I rarely have to mess with it now.

Just picked up an A7iii and an FE 24-105mm f4 G OSS, which is likely to keep me going for the next few years.

The Mk3 is a fair step up from the original M1, both in terms of low light capability and focusing speed amongst other things. The focal length of the zoom is pretty much perfect for what I shoot most of the time and the image quality is solid. At the other end of the focal range I'd love an FE 100-400mm f4.5-56 GM, but I can't really justify $2500 on another lens right now.

In the meantime, I'll probably invest in a second-hand wide angle zoom, or a 35mm pancake lens for the A7 Mk1 as my discrete street photography carry.

Get the sigma version of that lens. It’s great less than half the price.
