Seems to remember various players playing ahead of a transfer and doing a goodbye wave at the end of the game...

Fair point, but it’s also a risk to play a key player when they’re on the verge of a potential transfer, especially since the deal is imminent and just a few days to completion. One bad injury, and the player and both the club lose out. Managing the situation carefully benefits everyone involved.
They need the points. It's rare that players are dropped in big transfers now

Is that your rule or just an assumption because it isn't 100% acurate.
It’s just common sense—or as they say in the world of commerce, business sense. In business, common sense is anything but uncommon—it’s the cornerstone of sound decision-making. After all, no successful deal is made without weighing the risks and rewards, and managing key assets (like a star player) is no exception.
