Unfortunately, getting to Cardiff from London is far easier than the service from Manchester.
There are far more frequent trains with much larger capacity.
The Manchester to Cardiff train service is shite.
If the hotels sell out or are far too expensive, try Newport or even Bristol...

As @Talywain Blue stated, any additional info required give me a bell via PM.
Loads of ways to get around any parking issues. Use the London Paddington to Cardiff trains eg. Bristol or Newport. The M4 east can be a nightmare around the Brynglas Tunnel in Newport.
Two Spoons in very close proximity to the Principality.
