For posh nosh I recommend 'The room in the town' in the old part of the City. Really good food. (Fine dining Scottish food) Try the haggis starter.

The How Towdy is good for a few scoops (just off grass market)
 
For a bit of "the other" it has to be a trip to the Burke and Hare on Lothian Road.
 
the Edinburgh Derby is on the Sunday 2.15pm ko at Hibs ground so dont know if you are around for that or not.
what kind of food are you looking for? Scotlands best Indian is about 100 yards away from your hotel.The Mitre pub is right across the road from your hotel and is a good place to start your day / night.

if you like old stuff , castles etc then dont miss linlithgow palace ,its maybe a 30 minute drive out of town ,the town is nice too and eat at the 4 marys pub on the high street
 
Johnny, i've been a couple of times. Went for my Dad's 50th a few years ago, went to this restaurant called "Le Cafe St Honoré". It was that good i kept the card so i can go again sometime... i can remember it being pricey but it's one of the best meals i've had eating out: http://www.cafesthonore.com

The Castle's worth a look aswell.

Check the restaurant out though.

Sunday mornning a nice walk in the botanic gardens to clear the head from saturdays hangover, then onto rose st and start again.
Brittania is worth a visit or get a train to Dumferaline and get shedded in Tappi Torries.
Enjoy.
