Every Avanti train has at least one unreserved carriage (usually C), the 11 carriage trains have two , C and F.

The on-the-day upgrade to Standard Premium with Avanti on the Manchester to London route has gone up recently to £30 each way... though I have been on some packed trains and they get Declassified at the last minute

have a look at the seatfrog app too - you can bid to upgrade to first class which starts at £35. I've done it many times & is useful to know.
