Looks bloody lovely that.

My OH is strict veggie, but I'll generally eat anything.

We had a spicy coconut dal a couple of evenings ago with chili -panko fried tofu, all homemade.

We always batch-cook curries and other sauces and then freeze them in portion sized bags.
 
I've eaten lots of vegetarian nosh over the years because my brother always had trouble eating meat as a child, went veggie at an early age, and my mother supported him. It was seen as a bit weird being a veggie in those days, the late 60's, but I accepted it.

Yeah, you don't need to eat meat to enjoy a tasty offering. An onion bhaji is a perfect example of that, but I have never eaten a veggie meal without me feeling undernourished and empty a couple of hours afterwards.

It's an absolute load of tosh that avoiding meat is healthier for you. I would argue otherwise, because of all the people I know that don't eat meat, incuding my brother, all of them, bar none, are sicklier and more prone to everyday maladies than the rest of us.

I remember reading an article in a paper written by someone years ago who became a vegetarian as a student due to financial considerations, and stayed a vegetarian for a number of years after graduating.

He started eating meat again at some point afterwards, and it was a revelation to him how much more energised and healthier he became afterwards.

I totally get why some people don't want to eat meat for ethical reasons, but spare me the bullshit about it being the healthier option.

It isn't. It makes no difference whatsoever with regard to our longevity on planet earth.

I'm living over in the US at the moment, and some places just don't cater for veggies at all. I'll pretty much eat anything, but we have to find somewhere that has a seafood option for my OH when we go out.

Travelling can be an issue as hardly any of the Maccies offer the McPlant Burger, and the fries all contain 'natural beef flavour' whatever that means. They say Hash Browns are veggie, but they're cooked in the same oil as the fries, so they aren't. Also, gas stations and rest stops rarely have any non-meat sandwiches, or veggie cheese sandwiches on offer. They just aren't set up for it over here.
