Home made vegetable soup

Carrot, cabbage, peas, onion, leek, turnip, tin of mixed beans, red lentils, potato, mushrooms, vegetable or chicken stock, dash of Lea and Perrins, nam plah and dark soy.
Makes about a gallon.
Lasts a week.
 
Not 'officially' a veg soup but I boil down the bones of a cooked chicken (couple of hours) to use as the broth then I sauté down those vegetables you mentioned, sometime add lentils then blend the broth and vegetables..
Season with salt and pepper and add a good has of garam masala and coriander.

Oh and I add the remaining chicken from the roasted chicken (plenty left) in at this stage too.
To serve, I add a sprinkling of chipotle flakes with bread.

This will last me all week (at least for lunches). Incredibly tasty and healthy.

I'd add cheap but you know.....leccy bills for the cooking bit skews that somewhat.
So, not a vegetable soup at all then.

There are several variations I've noticed with 'vegetable soup' - Autumn root vegetable soup, Highland veg, harvest soup, etc. But I just throw in any veg that is a day or so away from being put in the food waste - not been poisoned yet! Anything that is a 'vegetable' is fair game! A bit of shredded cabbage goes well, too. And don't forget, most soups, not just veg, are improved with the addition of a spud.

Carrot and leek. Bit of chilly and anything you have left over. Lakeland soup maker. Done in 30 minutes. Smooth or chunky, the choice is yours.
 
Not seeing many tomatoes included (yes, I know it's a fruit) but a necessary ingredient for a good veggie soup, unless of course it's leek and potato or such like
