Home made vegetable soup

Here is my winter warmer...


4 cubes of veg stock
Lentils
Carrots
Add some Ras el Hanout for a Middle Eastern twist.
 
Carrots turnips and swede, red onion. Highly nutritious and bloody cheap. What's your favourite combination
Sliced brown onion sautéed in 50/50 unsalted butter & olive oil, add a heaped Tbs of plain flour and mix. Mix in cubed carrot, swede, turnip, squash (butternut), celeriac, and sliced celery. Add veg stock (low salt Boullion) to about an inch over the veg and cook slowly until the veg softens and the liquid thickens.

Edit: You can also add a generous dollop of harissa paste for a flavour kick.

Served with mahoosive doorsteps of your favourite white bread, lathered in unsalted butter.

Mrs G's courgette soup.

Dice 3 courgettes and cover in filtered water (water down our street is rank). Add 3 veg oxos.

Slowly bring to the boil, then simmer until soft.

Blend, whilst adding cream. Season to taste.

It's MILES better than anything Heinz, Baxter's or Campbell's can do

The cheesy croutons went without saying, I’d add cheese soup to the list my ex mother in law used to make after Xmas basically use up all the left over veg and cheese was fantastic, not feeling bad had the new shoulder fitted this morning drugged up too fuck now :-)

This is as bad as it gets now with your shoulder. Physio will be grim, but will get easier. Then they can untangle you leg…

I wouldn’t ask the hospital for cheese soup.
