Is Manchester airport the worst in Europe?

Flew to Puerto Vallarta last Wednesday. From dropping the car off to passing through security in T2 was less than 30 minutes. We did arrive 4 hours before the flight was due just to be sure but sailed through. The queues for food/drink in T2 were ridiculous though.
 
Loving it. First time here but I'm hoping it won't be the last. I'm liking the early afternoon KO times though!
We did a tour to a secluded island (not really an island just a Catamaran to the other side of the huge bay) and it was stunning. A real tropical paradise. Well worth the visit

 
Is fast track still worth it? Flying t3 Friday night but my missus is pregnant so don’t want to queue for ages if it’s avoidable
 
Please bear with me on this question because I am not a frequent flyer. I only flew for the first time 8 years ago (I had a fear of flying since being a child).

I'm going to Dublin next week and last time I went there was from Heathrow with BA. This time I'm going from T1 at Manc airport with Ryanair. Only ever flown with Ryanair once before.
I know I do the online check in the day before, but is there any time restraints on when I can do the self service check in thing with the hold luggage?
We are looking to get to the airport about 5pm for our 10pm flight. Just want to dump the hold luggage, do the (no doubt) horrendous lengthy security checks queue and then still have some time to relax before the flight.

Any advice much appreciated.

I flew out from T2 the other week. Flight was 8.30, we got there at 4.30 and they opened the check in about 15 minutes later. Was in the bar before 6
