I think barm should be correct, however the words barm, barmcake and barm-cake do not appear in many dictionaries and upset spell checkers.

According to Channel 4 web site Countdown used to use the Oxford Dictionary of English but now uses Oxford Dictionaries Online.It’s weird that isn’t it. It is in the Oxford English Dictionary though, isn’t that the one they use on Countdown?
So we can assume the usual list of candidates; barm, bap, bread cake, stottie etc doesn't include barm or barm cake in Oxford.

In Lancashire it’s a muffin, Ashton u Lyne used to be in Lancashire and the indoor market sold the best oven bottom muffins ever. I think someone else mention these. With chips on, delicious.
