I know the Russians have said crossing a certain line results in an escalation but surely at one point a line is going to get crossed?

Kind of depends.
At some point Ukraine will reach the Sea of Asov if they cross the Dnipro and cut off the Russian forces in Zaporizhzhia and Kherson (east/left bank) and gradually tighten the noose such the last place left is the area around the NPP.
Blow it up and they poison their own...
