I think you are assuming immediate alignment to the EU. That probably wont happen. I would have thought first there will be some kind of transitional period where Scotland remains aligned with whats left of the UK. Probably keeping the pound under some kind of currency agreement (or not). EU will come later and then your concerns are valid. If Scotland moves to the Euro then there will be a border and all that hangs off it. It is not easy but neither is it insurmountable. We dont have the equivalent of the GFA to consider after all.
So a cake and eat it independence then?
We will have your currency still, your central bank perhaps, keep the barnett formulae for a few years etc etc.
Agree though nothing is insurmountable when you dont want it to be.
