That is pit cooking, whan you dig a pit and stick the hot shit from a fire on top with a few hot rocks.
It is the finest method of cooking imo after bbq. A venison leg wrapped in straw and done for 3 hours in a pit is the best meat i ever tasted i dare say.

The main thing is the meat absorbing the flavour. i just know whole rack works and aim for my skills of mastering heat at x time and so on to get the most out of it. Adding chips for smoking and keeping the temp just perfect i find counts for a lot.
Gonna try your chinese bbq style though.

Oh, a leg of lamb with usual marinade is beyond good.

With Chinese style ribs I think I like to get the marinade and sauce all the way around the individual rib, but I guess I'm just following how they tend to do it in the restaurants.

It's high time I did a rack of ribs American style though - haven't done that for a couple of months.

I'm doing tuna steaks out there today though.
 
That recent thread about the guy who couldn't get favourite KFC meal because it had bacon in it made me think about BBQ recipes involving bacon.

I have for a long time been thinking about trying this one out: BBQ Pit Boys bacon bomb. Anyone tried it out ? It looks amazing.

Think our BBQ needs its annual overhaul.... scraping off the mouldy grease from last year and leaving it burning for an hour to decontaminate!

Saturday's due to be good up here, so will no doubt get the first al fresco meal of the year on the go. Mrs lazza makes a mean curried chicken marinade that gives delicious results that I could eat every day! With home-made chapatis cooked on the BBQ, and some chutneys, it's spot on!
 
I was looking at the pizza stone / oven attachments at the weekend. They look great. Anyone used one?

Ive got a £200 voucher for B&Q and want a BBQ. Can anyone recommend anything? Not really sure what ill get for that money but i do use the crappy one i have now a lot so want to invest in something decent.
