I stayed in the Hotel Cok in Amsterdam many years ago.

Apt name I thought.
 
This place wasnt bad in Barca a couple of years ago either

Great location and decent rooftop pool to relax at after a couple of open top bus tours

i think i remember that hotel,it was sandwiched between the ballbag inn and the testicle towers if i`m not mistaken....

I loved the Hotel de Paris on Monte Carlo as it was all pure theatre, the Hilton at Lancaster Gate just because it was in a couple of 60's movies.

But I suppose the best would have to be Ritz Carlton Central Park for great views, service and being where it is.

I've stayed in The Hotel De Paris too. Excellent. We had champagne cocktails on the terrace on Casino Square, Dinner, free bar and two nights paid for by my employer.

Another great hotel was Ashford Castle in Co. Mayo. Bill Clinton was staying there at the same time
 
As a big city rather than resort kind of holidaymaker, two stand out for me.
The Merrion in Dublin, near the Irish Parliament, was luxurious but with understated class.
The St Francis in San Francisco's Union Square had a great location and gave off a real vibe of of history. Two genuinely world class hotels.
