Long ago nobody paid taxes, the nations income was the sole responsibility of the monarch. This was primarily achieved through rent from land and property ownership. Fast forward a few hundred years and taxes became the primary source of income for the nation, a large part of the land and property owned by the monarch was put into this crown estate and the ownership rights waived (each monarch had to do this) in return for funding. This crown estate continues to generate a vast income for the nation and the Queen is funded from a portion of that.

Agreed, the queen takes a proportion of the Crown Estate and the rest goes to the Government. So in accepting a pay rise the queen accepted money that would otherwise go to the public purse

Don't you think that having a monarch adds to democracy? Royal assent is at least one final sanity check before something passes into law. I certainly don't see being a monarchy as counterproductive to a democracy.
