I know very little about taxation but why would he put the money through teh restaurant? If he is trying to avoid paying taxes then putting it through a restaurant would be a silly idea. He has to pay rates, corporation tax etc.. Hardly tax evasion.
The only explanation for pumping money through an organisation such as a restaurant would be to 'clean'/launder it. The case does not appear to make reference to laundering. That in itself would be a far more important charge than simply evasion, and would carry a significant custodial sentence too.
I have absolutely no idea whether the restaurant thing is true or not. One thing is clear, the HMRC are going for him.
