Mario Allstars for the SNES. Still play it fairly often.

Super Smash TV (perfect controls, simple gameplay, more addictive than crystal meth)
Super Mario World (best game ever for me - the star road was incredible)
Super Street Fighter 2 (Guile looked like Vanilla Ice but the little gay kick Ken did drove me insane - and anyone beating me using Ken's gay kick is also subhuman. You know who you are philinho)
Super Mario Kart
F-Zero
Flashback

All on the snes - nothing comes close!

Mario Galaxy on Wii is also awesome

No-one's going to say this, but one game I loved that I wish was still compatable with the PC was IndyCar Racing II... about 1995.

Sure it was Indycar, but it came with a car and driver editor that allowed you to change the driver names and paint the cars... months of fun as I changed them all to F1 drivers. Fantastic realism as well.

Also spent hundreds on Daytona USA in the arcades.
