I’m just not keen on that whole superfast, show offy Aerosmith, Def Leppard, Metallica kind of thing

TBF The 'smiths and Leps don't really go in for that stuff. I'm not big on the shred merchants and certainly not impressed by speed for the sake of it: it's the choice of notes not the number of them that counts. I do like Joe Satriani though: he does a particularly fine version of Highway Star (with Chicken Foot) where he not only does the Blackmore guitar solo but also plays Jon Lord's organ solo on his guitar.
