Well come on, Andy, HTF do you make soup out of cheese. Or are yer just making fondue, in memory of that well-known Swiss skunk whose name just escapes me!!
Just chicken/turkey stock and all your left over cheese grated/crumbled into it, the more verities the better and simmer for 10 minutes simple and bloody tasty, season to taste eat with lots of crusty bread, can't believe you lot don't have it, oh add double cream, forgot that, my bad :-(
Edit try and get some Stilton or other blue cheese in it, makes all the difference
I fucking love Stilton. Stilton soup might have to be on my to do list. In fact, I had a half decent Stilton salad dressing yesterday at Miller & Carter. Anyone who can't stand Stilton is missing out.
