Mince up your onion in a food processor with a little water first and put in a dish to one side.
Mince up some garlic and ginger in a food processor and set that to once side in a separate dish.
Heat your oil and add your spices (your choice what you put in, but always include a stick of cinnamon) for about 30 seconds to release the oils/flavours then add your onions. Depending on what kind of taste you want for your curry dictates how long you cook the onion - 5-7 mins. Add your garlic and ginger after that and cook for another couple of minutes. Add a tin of chopped tomatoes and let it all cook down until the tomatoes have darkened.

That's your basic masala. Add whatever meat and additional bits and bobs you like following that along with about 250mls of stock.

Easy curry.

would normally go for a Naga because it's hot and tasty, last night decided i would have a change
and went for a himalayan chilli chicken, got to say ....bloody great dish, spicy and extremely tasty.
