I love my curries. A good dopiaza is rare. I had one in last year though - with big onions and fresh mango. I've asked the chef for his massala recipe, but so far he's refused. I'm working on it.

I've tried to recreate it myself but got nowhere near. I'm thinking fennel but not sure.
