If you're going with your girlfriend, I'd stick around the Grafton street/Stephens Green area for going out. Nicest part of town really and plenty of shopping to keep her happy and good places to eat and drink.
Lot's of great pubs - McDaids, Kehoes, Neary's, Sheehans.
Music bars - Hogans, Bruxelles, Grogans and anywhere on Wexford street too
Dawson Street - lot of late bars, more expensive, bit posher
Against the Grain for an excellent selection of Craft Beers on Wexford Street if that's up your street.
To eat - there's several Michelin star restaurants in town, look them up if that's your thing
There's plenty of great alternatives:
Saba - great Thai place
Fade street social - tapas, painfully trendy and pricey but great food
Any FXB or Marco Pierre White for steak. Shanahan’s if you've got deep pockets!
Pizza stop is a very cute Italian off Grafton Street and stay away from Indian over here, you'll be disappointed and it's pricey
Stay out of Temple bar and watch yourself in north inner Dublin late at night, we've a big heroin problem in the inner city and its most visible there.
Dalkey, Howth, Malahide, are all coastal villages well worth a visit outside the city centre and the Phoenix Park is an amazing amenity just west of town. My favourite pub in Dublin, Ryan’s, is near the entrance to the park. Lovely ambience and a great pint. Good pub grub too.
There’s other parks in town like the Iveagh gardens and St Stephens Green and Merrion Sqaure which are very central and if it’s sunny are nice for a stroll.
There’s always plenty of plays, gigs and musicals on, check out the Abbey, Olympia and Borg Gais theatres for lisitings.
If you’re an art buff, check out the listings on the national gallery and IMMA (modern Art). The latter has lovely grounds to walk around.
