Has anybody got a great curry sauce recipe?

That looks great, a few ingredients I don't have, I will get them and cook it. Not for me with the pork belly, as I gave up meat two years ago, but my sons would love it. I might try the same sauce with large jumbo prawns though. Cheers for posting it.
I've never really found a vegetarian curry recipe I'm 100% happy with. If I want to go meat free I have had better results with spicy noodles - e.g. it's possible to make a really great version of Szechuan-style Dan Dan noodles using Quorn mince.

I hear you. Although, having said that. I do a big pan of mushrooms in loads of garlic, I mean Dracula exclusion zone level, with added cummin, Masala, turmeric, sliced chillies and at the end chunks of onion, slices of peppers, so they don't go soggy. I cook the curry sauce in a separate pot, then ladel it over and leave to get acquainted. This cooks the onions and peppers so they still have a bit of bite. It's good. A few prawns can lift it too.

I make my rice with a heaped teaspoon of turmeric and black pepper in the water for a lovely yellow rice. It will never be as good as having beef, chicken or that pork one you posted, but it's still delicious.
 
My favourite curry recipe is for one called Gang Hung Lay from Northern Thailand.

It's unusual for a Thai curry as it uses no coconut milk. The other thing is that it is based on pork belly and pork ribs, so nothing like you you get from the usual Bangladeshi run UK Indian curry house (not that there's anything wrong with those, but they can be a bit routine).

don't think I could take that much garlic, don't want to smell like a Frenchman.
 
That's my problem. Glasgow has some brilliant restaurants and I was spoiled. Living on the east coast now and the drop in quality is worse than my teams this year. I had a look at the national dish of Chad and on reflection, being deemed an undesirable and refused a visa is probably a blessing.
If you live anywhere near Aberlady there is a Indian Takeaway there called Grace of India, the food is amazing.
