Not strictly true. A prime number is any natural number that cannot be formed by multiplying two smaller natural numbers. That's why the number 1 isn't prime (it would be under your definition).

It would be under your definition as well. The real definition is that a prime number has two divisors - 1 and itself. 1 only has one divisor, hence it's not prime.
