He's definitely playing differently under Moyes to how he did under Dyche, which is probably no surprise. He's carrying the ball out more and playing more progressive passes. Before, he only had to bother about defending.

Maguire under Ten Hag, than Stones under Pep. In fact, Maguire's stats look more impressive, and we wouldn't want him, so....
It's a big ask to go from doing what Branthwaite currently does to what Stones does (when he plays). A huge ask in fact. Which is probably why Pep seems more keen to keep the defenders he knows, or to integrate players younger and cheaper than Branthwaite would be.
