Why is Semitic defined as;

It was intended to be pejorative only for Jews and while that's down to the guy who coined the term, trying to change the definition became a lost cause once Jews adopted the term with that same definition as something to be opposed (effectively anti-antisemitism). As an alternative to "Jew-hatred" it caught on - maybe you could be antisemitic without hating Jews - but also got tied up with anti-Zionism.
