Still time to draw a line under this.The big cranes have all gone from the ground now. There are a couple of little ones (or were, ten days ago), but they may have been for moving things like Portakabins.

I largely agree. I could see a case of having their last home game to open the new place, but not more than that.
Spurs appear to be angling for a 'big' match to open it, and their remaining league matches after Arsenal are Palace, Brighton, Huddersfield, West Ham and Everton.
The first competitive game at the new stadium will be a big game whoever the opponents. At this stage, Spurs just want to be in there. Preferably a daytime game, because of the need for fans, police and stewards to familiarise themselves with the new access routes (away fans, for instance, will be at the opposite end of the stadium); preferably not a big derby or any game where there's potential for trouble; and, from Spurs' perspective, preferably a game that they have a good chance of winning - they don't want to get off to a losing start at the new place!
