Let the Americans start first. I've never seen liver or kidney in a supermarket in the US and have never met an American who has ever eaten either. In fact they think we're a bunch of dirty bastards for eating it. God knows what they'd say if tripe was suggested. They'd probably call out a S.W.A.T. team and Adam Richman would have a breakdown.
 
Ever had it? I doubt many have under the age of 40. My mate mentioned it in the pub tonight and it evoked memories of miserable meal times! My mum would buy it from the tripe shop. My dad preferred tripe called 'honeycomb' and my mum liked 'slut', yes it was a fukin slut! Horrid slimy flavourless shite that we would have with salad. It needed copious amounts of salt vinegar and pepper just to give it any kind of flavour!. Nowadays I believe it is mostly used in pet food thank god.
Been doing loads of cooking this week, made a goat and mutton biryani Monday, my best one yet and yesterday I cooked PAPAITAN KAMBING (BITTER GOAT STEW). 1.5kg goat,.5kg tripe, green chillis, lemon and lime, loaded with red onions, ginger and garlic cloves with a garlic salt, ginger, chilli, black pepper sauce in spiced vinegar water. I never realised tripe was so high in cholesterol though so not something you should eat too often. You could say tripe is something you could stomach or you can’t.
 
In Lancashire and other parts of the North of England in the 1950s there were 146 UCP shops-cum-restaurants specialising in tripe dishes and with long queues for seats. UCP stood (and still does at its single remaining outlet) for United Cattle Products, who also provided ox tail, cow heel and other bovine extremities in an age when little was wasted. Tripe was also sold in chip shops.
