Been doing loads of cooking this week, made a goat and mutton biryani Monday, my best one yet and yesterday I cooked PAPAITAN KAMBING (BITTER GOAT STEW). 1.5kg goat,.5kg tripe, green chillis, lemon and lime, loaded with red onions, ginger and garlic cloves with a garlic salt, ginger, chilli, black pepper sauce in spiced vinegar water. I never realised tripe was so high in cholesterol though so not something you should eat too often. You could say tripe is something you could stomach or you can’t.
