Tripe.

Under 40? Yes.
Had Tripe? No.
Would feed to dog? No.

My two fellas have tripe every day, along with raw duck, Turkey or beef. It’s untreated and green. Still can’t get used to the smell at 6am every day. It’s like crack to them. They love it….. The spaniel sulks if he doesn’t get his daily fix….
 
Don’t mind a bit of offal.

Tripe with vinegar and brown pepper and pigs trotters were quite a regular occurrence back in the day.

Had tripe cooked in tomato with pasta in Trastevere , Rome earlier this year.
Proper peasant dish but bloody lovely- my fellow diners were gagging though.
 
Been doing loads of cooking this week, made a goat and mutton biryani Monday, my best one yet and yesterday I cooked PAPAITAN KAMBING (BITTER GOAT STEW). 1.5kg goat,.5kg tripe, green chillis, lemon and lime, loaded with red onions, ginger and garlic cloves with a garlic salt, ginger, chilli, black pepper sauce in spiced vinegar water. I never realised tripe was so high in cholesterol though so not something you should eat too often. You could say tripe is something you could stomach or you can’t.

Let the Americans start first. I've never seen liver or kidney in a supermarket in the US and have never met an American who has ever eaten either. In fact they think we're a bunch of dirty bastards for eating it. God knows what they'd say if tripe was suggested. They'd probably call out a S.W.A.T. team and Adam Richman would have a breakdown.
I see liver in most supermarkets, never kidneys. I had some really good veal liver recently, lamb is my favourite. It’s pretty traditional to eat the liver from any game animal you shoot and I know a lot of people, myself included who eat the heart too. Our local supermarket has tripe, chicken feet, gizzards etc but mainly because the Mexicans love it
 
Seeing these old photos makes you realise how sad our high streets are now And a much worse place for some of the shops and restaurants that have been lost

For many years, my Dad worked at the UCP in Levenshulme, so did most of his family. On my birth certificate, my father’s occupation is written down as ‘tripe dresser’. I imagine there’s not many people with that on their birth certificate. UCP pies were the best ever.

I remember my mum doing tripe and cow heel for my dad, she hated it. Both me and my dad loved it and one thing I do remember was it sticking my lips together, just like glue......
