I had pretty much the same observations. Stones can play CDM and be successful at it, if we want someone who simply wins the ball, plays it sideways/backwards and keeps it ticking over. If we want someone like Fern, who, despite being a CDM is progressive, Stones is not likely to be that player.

I think you're both wrong.
Stones has always looked ill-at-ease when he's working out how to play a position. This stage always makes him look clumsy and uncertain, but look how it turns out in the end!
Once he's gotten some more game time there and some confidence, he'll look quite good.
I, myself, groaned here and there when watching his play in mid; some of it great, some of it being a 'def-in-the-mid'.
Very mixed decisions prompted by not wanting to be caught out in possession.
He has all the ability to be an elegant midfielder; the stride and strength, the height, the ball retention and space-making for himself.
He, now, just needs the confidence to drive forward making quick decisions for forward passes.
