Mutton , especially cutlets , rump and offal . I think that allowing the animal to mature before being slaughtered enhances the flavour of the meat .
It's a bit difficult to source mutton but it's worth the hassle .

For me it has to be lamb, I love it. I have eat kangaroo twice now and both times have been when I have been skiing in the french alps. Its very nice and a lovely deep red/crimson colour.
