Fish And Chips

Doing my own chippy tea this week for the family. Going for a scottish style "fish supper" arrangement.

The chips will be double fried. Maris Piper chipped/pre soaked/washed in cold water.
Then part fried with beef dripping. Cooled/drained, then deep fried in lard.
The Haddock will be split into two pieces (the supper bit), and fried in lard with a thin, very crispy batter.
Proper Marrowfat peas (not tinned), long soaked and then cooked.

Side options will be yellow "English" curry sauce (NO sultanas!)
Chip shop brown gravy.
Mushy peas for the kids.

I'm a bit pissed off that i forgot to order my supply of genuine battered white puddings!

It all sounds that fancy it could almost be French, well done sir it sounds excellent.
 
Think the basa is imported catfish tastes shite

Thought they were using pollock or haddock as a cod substitute, basa is a piss poor alternative I sometimes use them for fish tacos as they are cheap but no way would I have it as a chippy fish! Taking cost cutting to the extreme there.
 
I was in No 8 Prestwich the other night. On paper it looked great with everything cooked in beef dripping, but to be honest I thought it was bang average. Maybe I expected too much.

My recommendations in Greater Manchester:

1. Taylors, Woodley Precinct.
2. Tompsons, the Rock, Bury. Very consistent. They do hake too.
 
will check it out. thanks. Life has gotten so much easier since I started using instacart. Whether it’s groceries, household supplies, or a last-minute birthday cake, the ability to have it delivered to my door saves so much time. Especially during busy weeks, it’s a total game changer.

Don't forget to make your own tartare sauce.
 
Andy’s chippy Hurst Cross Ashton near Ashton United’s ground is really good chippy food. I can’t go in anymore as it’s the last place I bought a meal for my Dad three years ago, his last ever meal as he passed away a couple of days later (8th July) but it was his favourite chippy for a treat.

During Covid if you were queuing outside and wanted a fish, Andy would look at you and do a wrist up and down gesture, a thumbs up and your fish was in the fryer!

I used to work with a big fella at Pear Mill in Stockport, he could eat for England. One of his meals consisted of double chips and peas from the Woodley Chippy but he would get a meat pie from the bakers opposite, a big one that you’d normally cut into four pieces.

He was called Tony, lived in Stoke, was barred from his local “all you can eat Chinese restaurant” along with his brother, and their wife’s. All big units who ate way too much. He also did around 35 slices of Pizza in the all you can eat lunchtime session when we were based at the Reebok Stadium in Bolton.

Tony was also a smoker amd used to do what he called a “power smoke”, three fags in around 10 minutes.

Lastly, he repaired my laptop so I asked him what he liked to drink “anything but toilet duck” was his reply.

He’d be around 70 now if he’s still alive but I can’t see him being around with his lifestyle.

I was in No.8 last Thursday and I think it's great. The fish is light and flaky and I always finish it whereas at many other chippies it's very stodgy and I usually struggle to finish it. Chips are perfect as well.
 
Don't forget to make your own tartare sauce.
Tartare sauce and gherkins are the only things i cannot stand. Nobody else in my house likes it either.
Having said that, it's still a good shout for me to try and make my own, as i know some people love it. Just need to find a suitable taste tester!

Tompsons still going? Blimey, I used to walk from the other side of town to get chips from there back in the early nineties, before the old place got knocked down.

Bridge St Chippy in Ramsbottom is always good when I go. Chips aren’t done in beef dripping though any more. Not really a deal breaker for me.

The Village Chippy in Stubbins just a bit further up the road was always the best. Haven’t been for years, since I moved out of the area, but the reviews are still good.
