By the way, I'm surprised how forgiving people have been, working out the possibilities of scenes unexplained by the writers/ director!

I think it's probably because it is Star Wars that people are forgiving and explaining things in a way that another less loved franchise would get shot to pieces.

After the farce of the prequels, people could see that the real Star Wars was coming back and fans wouldn't let one or two plot holes spoil the pleasure of all the other fantastic things going on.

Pesonally I think Snoke is the grand inquisitor from rebels and are we going to see the other Rens as it seems like Darth is a constant sith monica so so must Ren be with the nights with Kylo being like the sidious, maul, vader part.

Why do they call it canon?

I think it comes from the meaning 'canon of scripture' which is used in religious communities, Christians were the first to use the term in reference to scripture.....

The word 'canon' was then used for the first time to reference fiction in the early 20th century when the stories about Sherlock Holmes were compared to those of the originals written by
Sir Arthur Conan Doyle.

I like the idea of the Knights of Ren being a new dark side faction - I always thought "Sith" was a crap name - and it just opens up more possibilities in the type of villain you could have.
Imagine one in black Mandolorian armor (boba fett armor). That would be awesome!
