made an irish stew on wednesday. been threatning to make one for months.

was possibly meal of the year.

preparation 15-20 minutes.

two shoulders of lamb diced quite small.

6 onions.
6 carrots.
2 leeks.
10 decent sized spuds.
hand full of fresh thyme.
plenty of salt and pepper.
flour and butter for thickning.
2 or 3 lamb or chicken stock cubes.

dice the veg except the potatoes and boil with the lamb for an hour, add the thyme stock and salt and pepper. then turn the heat down and place the spuds in for an hour until cooked.

melt about 2 ounces of butter in a saucepan in a low light and add about 3 tablesspoons of plain flour and cook the flour for approx 2-3 minutes, if you don't cook the flour properly it will become lumpy when thickened.

all that fat off the lamb and butter.OMG heaven!

lie down for an hour and head to the nearest pub. got to be guinnes after that.

Try it, i thought the same but it is fucking awesome.

The jam caramelizes and is sweet and a bit burnt, wonderful.

Lamb with jam just sounds wrong mate, you're probably right though.

I'm with you on that. Would live my own pizza oven too but just seems a waste of money for what it is.

I experiment with all kinds of stuff, made one with BBQ chicken, mango and banana on thursday,was a lot nicer than expected

Will do. Do you up the temperature for the last part? Actually it doesn't matter as living at altitude temperature and cooking times are complete different (a soft boiled egg, 3 minutes in Manchester, takes 5 mins 33 seconds here; I have a lot of free time!)
 
Eggs in purgatory (great hangover cure!)

One clove of garlic, peeled and crushed
One small chilli, chopped
Tinned tomatoes
One egg
Parmesan
Small saucepan with lid

Fry garlic and chilli together (I sometimes fry some Chiziro & Chicken as well)
Add tin of chopped tomatoes
Crack one egg and pop in the middle of cooking tomatoes
Cover and poach the egg

Can be served on its own or on a bed of rice or fresh pasta
